Wash and core the peppers; dice them into strips. Peel and dice the tomatoes. Peel and chop the onions. Mince the garlic cloves.
Heat vegetable oil in a large skillet over medium heat. Add chopped onions and cook until translucent, about 5 minutes. Add minced garlic and cook for another minute.
Add the sliced peppers to the skillet. Sprinkle with paprika, salt, and pepper. Cook for about 10 minutes until peppers soften.
Add diced tomatoes to the skillet. Stir well and cook for another 10 minutes until the mixture thickens and flavors meld.
