Peel and finely grate the ginger. Trim and finely chop the lemongrass stalk. Cut the pork tenderloin into thin strips.
Heat 1 tablespoon of olive oil in the skillet over medium-high heat. Add pork strips and cook until browned and cooked through, about 8-10 minutes.
Push pork to one side of the skillet. Add remaining olive oil, then sauté ginger and lemongrass for 2-3 minutes until fragrant.
Mix the pork with the ginger and lemongrass in the skillet. Cook together for another 2 minutes to meld flavors.
While ingredients cook, spiralize zucchini or sweet potato to create noodles. Set aside.
Add the vegetable noodles to the skillet with the pork mixture. Toss gently and cook for 3-5 minutes until noodles are tender. Serve hot.
