Begin by preparing all your ingredients (mise en place) to ensure a smooth cooking process. WARNING: Use a sharp knife for safety. Dice the large yellow onion finely. Mince the garlic cloves and grate the fresh ginger. Roughly chop the fresh cilantro and set aside. Measure out all the spices and keep them ready.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the diced onion and sauté for 3-4 minutes until softened and translucent. Add the minced garlic and grated ginger, cooking for another minute until fragrant. Push the aromatics to one side, then add the ground beef to the pan. Break it up with your spatula and cook until browned, about 5-7 minutes.
Once the beef is browned, drain any excess fat if desired (this keeps the toast from getting greasy). Stir in the ground cumin, coriander, turmeric, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes, stirring constantly, to toast the spices and release their aroma. Finally, stir in the chopped fresh cilantro and remove the pan from the heat. Allow the filling to cool slightly.
Lay out the 8 slices of sturdy bread on a clean surface. Evenly spread a generous layer of the cooled beef filling over one side of each bread slice. If using, sprinkle about 2 tablespoons of shredded mozzarella cheese over the filling on each slice. This adds a delicious melty texture and richness.
Heat a clean skillet or grill pan over medium heat. Place the assembled bread slices, filling-side up, into the hot pan. If using a toaster oven, place them on a baking sheet. Toast for 3-5 minutes, or until the bread is golden brown and crispy, and the cheese (if used) is melted and bubbly. You can also lightly butter the bottom side of the bread for extra crispiness.
Carefully remove the hot Sambusa Toasts from the pan or toaster oven. CAUTION: They will be very hot. Place them on a cutting board and slice each toast diagonally in half. Arrange them on a serving platter and garnish with fresh lemon wedges. A squeeze of fresh lemon juice brightens the flavors and adds a zesty finish. Serve immediately while hot and crispy!
