Wash and seed the bell peppers; chop into strips. Peel and dice the tomatoes. Peel and slice the onions. Mince the garlic cloves.
Heat vegetable oil in a large skillet over medium heat. Add sliced onions and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.
Add the chopped peppers to the skillet. Sprinkle with paprika and stir well to coat the vegetables evenly. Cook for about 10 minutes until peppers soften.
Add the diced tomatoes to the skillet. Season with salt and black pepper. Reduce heat to low, cover, and simmer for 8-10 minutes until the mixture thickens slightly.
