Peel and cut potatoes into chunks, chop onions finely, and slice smoked sausage. Mince garlic cloves.
Heat vegetable oil in a large pot over medium heat. Add chopped onions and garlic, sauté until translucent (~5 minutes).
Stir in paprika and cook for 1 minute to release aroma. Add sliced smoked sausage and cook for another 3 minutes.
Add potato chunks to the pot, pour water or broth over, season with salt and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for about 20-25 minutes until potatoes are tender.
Garnish with extra paprika if desired, and serve hot with crusty bread or pickles.
