Combine dates, almonds, dried apricots, and oats in a food processor. Blend until mixture is coarse and sticky.
Add chia seeds, honey or maple syrup, vanilla extract, and a pinch of salt to the mixture. Process again until well combined and sticky.
Using your hands, roll the mixture into 1-inch balls and place them on a parchment-lined tray.
Refrigerate the energy balls for at least 15 minutes before serving to set.
